Sparkling wine made from Barbera/Camaiola grapes vinified as a rosé and then refermented in the bottle. The grapes are pressed whole bunches. After pressing, the must undergoes primary fermentation and ages in amphorae, creating the base wine; a small portion is retained to be used in the spring as a liqueur de tirage for the second fermentation.
