Grapes are selected in the vineyard and dried in dry, well-ventilated rooms until January-February. Soft pressing, light maceration of the skins, and temperature-controlled fermentation begin in stainless steel and conclude in small oak barrels. Aged in wood for approximately 12 months on its own lees with periodic bâtonnage.
