Grappa Schioppettino Blanc and Neri 0.70l - Domenis 1898

The alcoholic fermentation of Schioppettino pomace takes place in the must and then in the cellars. Distillation is carried out in a discontinuous system with eight copper stills, using direct steam. Careful cutting of the heads and tails by the experienced master distiller allows for the separation of a flawless, complete, and balanced "heart" of the distillate, with an alcohol content of around 75%. The "transformation" to the final alcohol content (40%) is achieved by dilution with water and cold filtration, at a temperature that guarantees the preservation of the fruity component. The grappa is colorless, clear, and crystalline. The aromas are frank and fragrant, elegant and refined. The palate remains excellently persistent and balanced. Thanks to the black grape pomace and its unique alcoholic fermentation, the resulting distillate is characterized by a rounded and balanced bouquet.
