Description
Seventy percent of the grapes are pressed directly, and the resulting must is destemmed and fermented in temperature-controlled stainless steel tanks. Thirty percent (Riesling and Sauvignon) undergo cold static maceration for 48 hours before pressing, followed by alcoholic fermentation at a controlled temperature of 18-20°C in stainless steel. Partial malolactic fermentation (50%) and six months of sur-lies aging prepare the wine for final bottling.
