Description
Fontanafredda's Barbaresco Coste Rubin is one of this historic winery's most traditional labels. The grapes come from various vineyards in Treis, Barbaresco, and Neive, all facing south/southwest; they are located at an altitude of 250 to 300 meters, on sedimentary clay soils rich in calcareous marl. The grapes, harvested around mid-October, are destemmed, pressed, and fermented at a temperature of 30-32°C, with frequent pumping over to optimize color and tannin extraction. Maceration lasts 10-12 days, and malolactic fermentation takes place before the end of winter. In January, the wine is transferred to barriques and 20- and 30-hl Allier oak barrels, where it ages for a year. It then stabilizes briefly in steel tanks, before being bottled and completed its aging.
