L’ Amarone è un vino nobile prodotto dai migliori grappoli, raccolti a mano e poi posti ad appassire in appositi plateaux per 3-4 mesi. In seguito all’appassimento, l’uva aumenta la concentrazione zuccherina del 25-30%. A gennaio l’uva viene pigiata e messa a fermentare per circa 25-30 giorni. Il prodotto viene quindi trasferito in vasche d’acciaio. Terminata la fermentazione malolattica, il vino viene lasciato maturare in barriques per 24-36 mesi e dopo l’imbottigliamento affinato in bottiglia per alcuni mesi. Questo tipo di prodotto si ottiene da una particolare selezione delle uve e solo nelle migliori annate.
