Cherry Reserve Grappa "Astucciata" - Castagner

Castagner's Riserva grappa is made from pomace of grapes from prized crus. The pomace is treated and preserved with the "GrappaSystem," a system developed by Master Distiller Roberto Castagner, which allows for controlled fermentation, achieved with the addition of selected winemaking yeasts. This system ensures the pomace is preserved in an ideal environment, with the right pH level, inside tunnels covered in food-grade plastic film, at high pressure and in the absence of oxygen, thus preserving the aromas intact for months. Distillation takes place partly in traditional bain-marie stills and partly in technologically advanced column stills, in three different distillations, to achieve the best aromatic yield and maximum finesse on the palate. Aged in cherry barriques for over 18 months. On the nose, fruity aromas of morello cherry are detected, complemented by enveloping notes of vanilla and wood. Excellent at the end of a meal, alone or paired with dark chocolate.
