Castagner's Fuoriclasse Leon Riserva 3-year grappa is made from the pomace of selected red grapes.
The pomace is treated and preserved with Grappasystem, a system that allows for controlled fermentation, achieved with the addition of selected winemaking yeasts. Grappasystem guarantees the skins are preserved in an ideal environment with the right pH level, inside tunnels covered in food-grade plastic film, at high pressure and in the absence of oxygen. This is the secret that allows the grape skins to remain ultra-fresh and maintain their aromas intact for several months. Distillation takes place partly in traditional bain-marie stills and partly in technologically advanced column stills, in three different distillations. The Master Distiller is entrusted with the delicate task of determining when the resulting grappas are ready to be combined into a harmonious blend. The grappa is aged for at least three years in small oak and cherry barriques.
