Grappa Prosecco "ICE" 0.70l Cardboard Box - Castagner

Castagner's Prosecco Ice grappa is made from the pomace of Glera grapes, the grape used to produce Prosecco. The pomace is treated with the Buccia Pura system. This system separates the pomace and excludes the seeds and stalks, allowing only the skins to be distilled. These are then treated and preserved with the Grappasystem, a system that allows for controlled fermentation, achieved with the addition of selected winemaking yeasts. Grappasystem guarantees the skins are preserved in an ideal environment with the right pH level, inside tunnels covered in food-grade plastic film, at high pressure and in the absence of oxygen. This is the secret that allows the grape skins to remain extremely fresh and maintain their aromas intact for several months. Distillation takes place partly in traditional bain-marie stills and partly in technologically advanced column stills, in three different distillations. On the nose, the more delicate fruity and floral aromas typical of Prosecco are evident, such as pear, apple, apricot, peach, and almond. It is rich in spring floral notes such as elderflower and mimosa. On the palate, it is soft, refined, and velvety. Excellent at the end of a meal, it is served ice cold.
