Description
Castagner's Prosecco Ice grappa is made from Glera grape pomace, the grape used to make Prosecco. The pomace is treated with the Buccia Pura (Pure Skin) system. This system separates the pomace and excludes the seeds and stems, allowing only the skins to be distilled. These are then treated and preserved with the Grappasystem, a system that allows for controlled fermentation, achieved with the addition of selected winemaking yeasts. Grappasystem guarantees the skins are preserved in an ideal environment with the right pH level, inside tunnels covered in food-grade plastic film, at high pressure and in the absence of oxygen. This is the secret that allows the grape skins to remain incredibly fresh and maintain their aromas intact for several months. Distillation takes place partly in traditional bain-marie stills and partly in technologically advanced column stills, in three different distillations. On the nose, it reveals more delicate fruity and floral aromas typical of Prosecco, such as pear, apple, apricot, peach, and almond. It is rich in spring floral notes such as elderflower and mimosa. On the palate, it is soft, refined, and velvety. Excellent after a meal, it is served chilled.
