Description
Castagner's Fuoriclasse Leon Amarone Riserva grappa is made from pomace of Valpolicella grapes, left to dry for over 100 days before being vinified.
The pomace is treated and preserved with Grappasystem, a system that allows for controlled fermentation, achieved with the addition of selected winemaking yeasts. Grappasystem guarantees the skins are preserved in an ideal environment with the right pH level, inside food-grade plastic film tunnels, at high pressure and in the absence of oxygen. This is the secret that allows the grape skins to remain ultra-fresh and maintain their aromas intact for several months. Distillation takes place partly in traditional bain-marie stills and partly in technologically advanced column stills, in three different distillations. Before aging, the grappa is aged for at least 18 months in small, first- and second-use oak barrels, previously used to age Amarone.
On the nose, intense aromas of vanilla, honey, raisins, peach, and bitter almond emerge. On the palate, it is rounded, soft, and persistent.
Excellent at the end of a meal, it is served at room temperature neat or accompanied by dark chocolate and cream desserts.
