Description
Only the finest grapes from the most suitable vineyards are used to produce Resilienza – Falanghina del Beneventano IGT. To this end, the grapes are carefully selected and harvested strictly by hand during the coolest hours of the day. In the cellar, the grapes undergo a cold maceration process at 6-8°C to preserve their aromas, prevent oxidation, and enhance the varietal's distinctive characteristics. Soft pressing occurs using a pneumatic press, and alcoholic fermentation takes place entirely in stainless steel fermentation tanks using selected yeasts at a temperature of 14-16°C for 15 days. Malolactic fermentation is omitted, and the wine is aged in the bottle for several months.
